Our Story

We Stand for a Food System That Works for Everyone.

The Lab began as a bold vision on a modest plot of farmland in Eastern Colorado. Today, it supports a growing community of innovative farmers and food entrepreneurs dedicated to revitalizing local food systems.


Life-long friends David and Roberto started with a passion for sustainable farming and a love of microgreens. But as they dug deeper into the food system, they uncovered a stark reality: efforts to create change were fragmented, leaving bold ideas to die on the vine. Farmers innovated alone, food entrepreneurs struggled without resources, and communities were left out of the conversation.


This disconnection meant the system stayed the same—inequitable and unsustainable. David and Roberto saw a better way: if we want to transform the future of food, we need to bring people together. The Lab was born out of this belief—a space where collaboration, innovation, and connection fuel solutions that work for everyone.
